(Makes 4 servings)
Serve these delicious potatoes with grilled or roasted sausages.
6 medium potatoes, skin on
Chef’s salt to taste
2 small green peppers, seeded and cut into thin strips
1 small onion, thinly sliced
6 tablespoons butter or olive oil
Scrub the potatoes and dry. Cut the potatoes into quarters and set aside.
Cut the aluminum foil into six 12x12 squares. Place one quarter potato at the center of one of the aluminum squares. Sprinkle with Chef’s salt and layer some pepper strips and onion slices on top. Add 1 tablespoon butter or olive oil to vegetables. Pull up the sides of the foil and fold them into one another to tightly seal the packet. Repeat with the remaining ingredients.
Place the packets on a baking sheet and cook for about 30 minutes or until the potatoes are cooked through. Carefully open the packages and serve.
