Makes 6 servings
3 tbs olive oil
3 fingerling potatoes, thinly sliced
½ cup thinly sliced Spanish chorizo (see note)
10 roasted piquillo peppers, cut into thin strips (see note)
12 large eggs, beaten
½ cup grated Manchego or Parmesan
½ tps smoked paprika
Salt to taste
Note: Chorizo is a cured spicy sausage from Spain. It is available in most supermarkets or can be purchased online
Piquillo peppers are slightly spicy peppers from Spain. They are available in jars or cans in specialty gourmet stores, or can be purchased online.
Heat the oil in a nonstick sauté pan over medium-high heat. Add the sliced potatoes and cook, stirring once in a while, until soft, about 5 minutes.
Add the sliced chorizo to the pan and cook, stirring, for 4 minutes. Add the peppers and cook for another minute or until hot. Lower the heat to medium.
Pour in the beaten eggs and sprinkle with the Manchego or Parmesan cheese. Cook, stirring constantly, until the eggs are set but still soft. Sprinkle with salt and smoked paprika and serve immediately.
