Blue Cheese Burgers
(Makes 4 servings)
1-1/2 lbs ground sirloin
About 1 tps each of salt and fresh ground pepper
4 to 6 oz blue cheese or Roquefort at room temperature
4 large burger buns
Sliced tomatoes, sliced onions, lettuce leaves, ketchup, mustard and any favorite condiments of topping and garnish
Preheat the grill to medium
Break up the sirloin and season with salt and pepper. Divide the meat equally into 4 mounds. Halve the mounds and flatten each ½ into patties about ¼-inch thick.
Quarter the blue cheese and roll each piece into a ball. Flatten each ball into a disk about the size of a 50-cent coin. Place a disk of cheese at the center of each patty, making sure to leave a ¼-inchedge all the way around. Top with the remaining patties. Flatten each burger gently between the palms of your hands, then pinch the edge of the 2 patties together firmly to seal and enclose the cheese.
Place the burgers on the grill, and cook for about 4 to 5 minutes per side to the desired doneness. Meanwhile, place the burger buns cut side down on the grill of 1 to 2 minutes to toast.
Remove the burgers from the grill and serve on the buns with assorted condiments and garnishes.
